How would you describe yourself as a chef in three words? Passionate, meticulous and mentor! Who or what has been the biggest inspiration in your culinary journey? My greatest inspiration dates back to my time at culinary school in France, where I had the privilege of learning from some truly remarkable instructors. One mentor in particular, Jean Blaret, left a lasting impression on me. In 2022, I experienced a full-circle moment when I returned to that same school, not as a student but as a teacher, and had the honour of working alongside him. Collaborating with someone who once guided me was both humbling and inspiring. To this day, he remains one of my biggest influences. What is your signature dish, and what makes it special? My signature dish is Seafood Waterzooï. It’s a traditional recipe from the regions of Belgium and Northern France, where culinary heritage flows seamlessly across the border. This dish captures the essence of true cooking, simplicity layered with depth. It celebrates the richness of honest flavours, brought to life by the finest local seafood and the humblest regional vegetables. Rooted in heritage and integrity, it’s a dish that tells a story and one I’m proud to share. What is your ultimate comfort food? Whatever my wife puts in front of me on my days off! If you weren’t a chef, what would you be? I definitely think I’d be a teacher. What local Bahraini ingredient do you love working with most, and why? Black lime (lumee) is my favourite. It offers a bold, earthy acidity that can completely transform a dish, whether savoury or sweet. Distinctly Bahraini, it adds depth, character and a touch of intrigue to every plate. It’s a small ingredient with a remarkably powerful voice. Who is the most memorable person you’ve ever cooked for, and why? One of the most memorable experiences was cooking for John Travolta and his mother during their stay at a resort I used to work for in Dubai. What truly stood out was how incredibly downto-earth they both were. Warm, approachable and genuinely respectful to every member of the team.
