Chef Pillai’s journey from a Kerala household to becoming a global ambassador for South Indian cuisine is a story of passion, tradition and innovation. At Jashan by Chef Pillai, located at Wyndham Garden Manama, he blends his deep-rooted heritage with modern culinary techniques, offering diners a unique experience that celebrates the rich flavours and intricate cooking methods of Indian cuisine.

Chef Pillai’s culinary journey began in his childhood, deeply rooted in the rich flavours and aromas of traditional South Indian cuisine. Growing up in a Kerala household, he spent countless hours watching his mother, an exceptional cook, who not only inspired him but also instilled in him a love for creating magic with simple ingredients. 

This early exposure to Kerala’s diverse spices, fresh produce and traditional cooking methods shaped his culinary style, which has evolved over the years as he worked in various regions and cultures. While he remains deeply rooted in traditional South Indian cuisine, Chef Pillai has embraced elements from other culinary traditions to create innovative and exciting dishes. 

Being recognised as the Ambassador of Kerala Cuisine is a tremendous honour for him — a responsibility he takes seriously as he strives to showcase the beauty and complexity of this regional cuisine to the world. 

His experience on MasterChef was a challenging but rewarding one, teaching him the importance of staying true to his culinary identity despite the competition. To stay inspired and innovative in the culinary arts, Chef Pillai draws inspiration from the world around him, whether it be nature, art or travel, and believes in the power of collaboration with other chefs.

His vision for Jashan by Chef Pillai at Wyndham Garden Manama was to offer a modern interpretation of traditional Indian cuisine. The concept was born from his passion for South Indian food, his extensive experience in the culinary world, and the support of the Wyndham Garden team. At Jashan, guests can expect a diverse menu that highlights the bold flavours, aromatic spices, and intricate cooking techniques of both North and South Indian cuisine. 

When asked for his recommendations for a three-course meal, he recommends the Appam with Fish Nirvana, Inji Puli Chicken Wings and Unniappam Falooda, an innovative take on a traditional Kerala snack. Chef Pillai emphasises the importance of building a strong and talented team, where passion comes first. He believes that passion is the foundation upon which a successful culinary career is built. Jashan reflects his culinary philosophy and heritage through its celebration of Indian traditions, commitment to fresh ingredients, and innovative approach to South Indian cuisine. 

He hopes that guests leave Jashan with a memorable dining experience, a newfound appreciation for South Indian cuisine, and a desire to explore its rich flavours and traditions further. Chef Pillai remains inspired by the diversity and richness of South Indian cuisine and looks forward to continuing to explore and share its endless possibilities with the world, while also inspiring the next generation of chefs.
